About the Beltsville Small White

The sole recognised variety is pure white throughout, the clean snow-white plumage set off by a red to bluish-white head, a black beard, horn-coloured beak, dark brown eyes and pinkish-white shanks and toes. White-feathered birds dress out cleanly without dark pin-feather stubs, which is why this compact heritage table turkey was bred white in the first place. Admitted to the APA Standard of Perfection in 1951, it remains scarce and is listed as critical/threatened by The Livestock Conservancy.
