About the Dark Red With White Wing And Tail Bourbon Red

This is the Bourbon Red's defining standard plumage: a rich, dark chestnut-mahogany body (the tom's feathers finely edged in black) thrown into sharp relief by pure white primary and secondary wing flights and a pure white tail, each main tail feather crossed near the tip by an indistinct soft-red bar. Hens carry the same pattern without the black edging. It is the only colour in which the breed is standardised, admitted to the APA Standard of Perfection in 1909, and marks the flavourful Kentucky heritage table bird now listed 'Watch' by The Livestock Conservancy.
