About the Broad Breasted Bronze
The bronze plumage is its signature: dark brown feathers tipped with a black band and shot through with an iridescent metallic sheen of copper, green and gold, closely echoing the wild turkey it descends from. The pattern arose from crossing English domestic turkeys with the Eastern wild turkey, then selecting English broad-breasted stock for heavier breast meat. This selection for size made it the commercial table bird of choice for decades before white strains took over, and it remains prized for traditional looks and flavour as a slower-grown Christmas turkey.
